Our good friend Diane De Filipi of Let’s Go Cook Italian has recently spent some time at the ancient Cavazzone Balsamery in Reggio Emilia (near Modena Italy). She’s here to tell Nancy Hawks Miller, our Director of Education, about how it’s made and offer some tips for using traditional balsamic vinegar.
