After many years of cooking for my family, I’m pleased to say that we have compiled a comprehensive and versatile recipe collection. I love the challenge of pairing different dishes with Goosecross wine, so I have personally tested each recipe to be sure it’s complete. My recipes not overly complicated, seasonally delicious with readily available ingredients, and they won’t leave you with too much clean-up. I sincerely hope you enjoy them.

Asparagus & Orange-Grapefruit Salad
Goosecross Cellars Recipe
Sparkling Rose

Ingredients:

1 pound asparagus
1 orange, peeled and sectioned
1 ruby red grapefruit, peeled and

sectioned
2 tablespoons tarragon, chopped
1 large scallion, chopped
1 tablespoon

wildflower honey
1 tablespoon rice vinegar
Salt and pepper to taste

Directions:

Wash asparagus and snap off tough ends. Cook asparagus until tender but still firm. Cut each spear

in half lengthwise and then into 2″ long strips. Toss the asparagus, orange, grapefruit, tarragon, and

onion in a bowl. Add the honey and vinegar. Season with salt & pepper and serve.

Serves 4
