After many years of cooking for my family, I’m pleased to say that we have compiled a comprehensive and versatile recipe collection. I love the challenge of pairing different dishes with Goosecross wine, so I have personally tested each recipe to be sure it’s complete. My recipes not overly complicated, seasonally delicious with readily available ingredients, and they won’t leave you with too much clean-up. I sincerely hope you enjoy them.

side dish for turkey
Ingredients:
8 ounces pancetta, chopped
8 shallots, quartered
Pinch of salt
Black pepper, to taste
2 pounds Brussels sprouts, quartered
½ cup white wine vinegar
2 tablespoons Goosecross Sauvignon Blanc
Directions:
In a large skillet, cook the pancetta over medium heat until it is slightly crisp, 8 -10 minutes. Stir in shallots, season with salt & pepper and cook until soft, about 10 minutes. Add the Brussels sprouts, vinegar, and wine and bring to a boil. Reduce heat to low, cover the skillet, and cook until the liquid is almost gone, 10-12 minutes. Transfer to a bowl and serve.
