After many years of cooking for my family, I’m pleased to say that we have compiled a comprehensive and versatile recipe collection. I love the challenge of pairing different dishes with Goosecross wine, so I have personally tested each recipe to be sure it’s complete. My recipes not overly complicated, seasonally delicious with readily available ingredients, and they won’t leave you with too much clean-up. I sincerely hope you enjoy them.

Goosecross Cellars Recipe Howell Mountain Cabernet
Ingredients:
4 tablespoons butter
¼ cup olive oil
4 beef shanks, about 2 pounds
½ cup flour
Salt & pepper, to taste
1 large red onion, chopped
2 medium tomatoes, diced
2 carrots, peeled & chopped
1 celery stalk, chopped
1 garlic clove, sliced
1 cup Goosecross Howell Mtn. Cabernet
1 bouquet garni – 2 thyme sprigs, 2 parsley sprigs, 1 rosemary sprig, 2 bay leaves
½ cup chicken stock
1 ½ cups beef stock
Directions:
Preheat oven to 300 degrees. Combine butter and olive oil in a large, deep skillet or casserole and heat over medium-high heat. Season the beef shanks with salt and pepper, and then dredge in flour. Brown the shanks on all sides and remove to a plate.
In the pan drippings, sauté onion, tomato, carrots, celery, and garlic until soft and browned, about 6 minutes. Add wine and bouquet garni and reduce until wine almost evaporates. Add both stocks and simmer for 5 minutes. Season with salt and pepper to taste.
Return beef shanks to the skillet and cover. Transfer to the oven and bake in the oven for 1 ½ hours.
