Colleen’s Kitchen

After many years of cooking for my family, I’m pleased to say that we have compiled a comprehensive and versatile recipe collection. I love the challenge of pairing different dishes with Goosecross wine, so I have personally tested each recipe to be sure it’s complete. My recipes not overly complicated, seasonally delicious with readily available ingredients, and they won’t leave you with too much clean-up. I sincerely hope you enjoy them.

Goosecross Cellars Recipe
Sauvignon Blanc

1 large pizza dough
2 medium-sized chicken breasts
Salt and pepper
Garlic powder
1 1/2 cups mozzarella cheese, shredded
2 bunches green onion, chopped
2 tomatoes, seeded & diced
1/4 cup freshly grated parmesan cheese

Garlic Sauce:
1/3 cup buttermilk
1/2 cup mayonnaise
1 1/4 teaspoons Italian seasoning
1 teaspoon minced garlic
1/8 teaspoon salt
1/8 teaspoon cayenne pepper

Heat barbecue to medium-high heat. Season chicken with salt & pepper and garlic. Grill chicken until cooked through, about 5 minutes per side. Dice chicken and set aside.

Garlic Sauce: Mix all ingredients together and chill in the refrigerator until ready to use.

Assemble the pizza by using your favorite large pizza dough. Spread garlic sauce over the top of the pizza dough. Layer mozzarella cheese, diced green onion, diced tomatoes and chicken. Top with freshly grated parmesan cheese. Bake in pre-heated oven @ 425 degrees for 15-20 minutes or until crust is golden brown.
