Colleen’s Kitchen

After many years of cooking for my family, I’m pleased to say that we have compiled a comprehensive and versatile recipe collection. I love the challenge of pairing different dishes with Goosecross wine, so I have personally tested each recipe to be sure it’s complete. My recipes not overly complicated, seasonally delicious with readily available ingredients, and they won’t leave you with too much clean-up. I sincerely hope you enjoy them.

Caramelized Onion Beef Brisket
A lighter sauce for spring that’s flavorful and aromatic
Goosecross Cellars Recipe

(1) 3 pound first cut beef brisket
2 teaspoons olive oil
1 tablespoon butter
4 medium onions, sliced
1 tablespoon brown sugar
2 medium carrots, coarsely chopped
1 (10 oz) bottle ginger ale
1 cup low-sodium beef broth
½ cup Goosecross Syrah
1 cup ketchup
1 (1 oz) package onion soup mix
3 cloves garlic, minced
1 tablespoon ginger, peeled & grated
2 bay leaves

Preheat oven to 300 degrees. In a large skillet, heat the olive oil over medium-high heat and brown the brisket on all sides. Remove from the skillet. Add the butter and onions and sauté until soft about 5 minutes. Add the brown sugar to the onions and continue cooking until onions brown and caramelize, about 5 more minutes. Add the carrots, ginger ale, broth, wine, ketchup, soup mix, garlic, ginger, and bay leaves.

Return the brisket to the skillet, making sure the liquid comes halfway up the sides of the brisket. If you need more braising liquid, add more beef broth. Cover tightly and braise for 3 -3 1/2 hours.
